The Old Mill and the Valley in which it sits, have long been a part of Canadian Heritage. Centuries before the coming of the white man, the Huron Indians roamed the Humber Valley.

Peppermint Crunch Cookies Recipe

Sweet, minty and pretty all at once, these easy holiday cookies will make a festive addition to your holiday cookie plate.

PREP TIME: 1 HR 10 MINS | TOTAL TIME: 1 HR 10 MINS | MAKES: 36 COOKIES

Ingredients:
1 pkg Pillsbury* Refrigerated Sugar Cookies
1 1/2 cups (375 mL) white vanilla baking chips or semisweet chocolate chips
8 round hard peppermint candies, crushed (about 1/4 cup/50 mL




Peppermint Crunch Cookies

Method:





































  • Heat oven to 350ºF. In large bowl, break up cookie dough. Stir or knead in 1/4 cup all-purpose flour until well blended. Shape dough into 36 (1-inch) balls. Bake 10 to 14 minutes or until edges are golden brown. Cool 1 minute; remove from baking sheets to cooling rack. Cool completely, about 5 minutes.
  • In small microwavable bowl, microwave vanilla chips and 1 tablespoon vegetable oil uncovered on Medium (50%) 2 to 3 minutes, stirring once halfway through microwaving, until melted. Stir until smooth.
  • Dip half of each cookie into melted chips mixture, allowing excess to drip off; place on waxed or parchment paper-lined baking sheets. Sprinkle each with about 1/2 teaspoon crushed candy. Let stand until set.

1-800-Get-Rid-Of-It

Striking The Right Note


Running 1-800-Get-Rid-Of-It does give Rick Crawford, owner and president, opportunities to benefit the community in unusual ways. He manages to recycle an impressive 60% of the items his crews pick up, so that striking piece of furniture at your neighbour's may have a storied past. Many readers/clients are also familiar with Rick's Clean Up the Humber event, but recently he had a more unique task. A local radio station, Jazz FM, had collected a lot of musical instruments after an appeal to their listeners. Rick picked them up and then delivered them to the music department at Regent Park Public School.
Like many other schools, programs and funds had been slashed, so Rick became a veritable Santa Claus, complete with Rid-Of-Its red outfit!
The arrival of Rid-Of-It's big red truck caused quite a stir. The instruments were then carted to the auditorium and carefully unpacked. Many students with musical abilities will appreciate some new opportunities from these underused treasures.
Ours is a throw-away society as our over-flowing landfills can attest to. It becomes essential to be creative about possessions no longer needed. The old axiom, one man's trash, etc. still rings true today. If you are living with clutter, paring down will simplify your life and perhaps enrich someone else's. Taking a picture of an old treasure will preserve the memory, making it easier to part with. You can be a secret Santa many times over!

The butter tart is considered a classic Canadian dessert. These tasty tarts were common in pioneer Canadian cooking, making them a genuinely Canadian recipe.
The origins of the tart are unclear, but some suggest that they came with the arrival of the “filles du roi” (Kings Daughters) or the “filles à marier” (marriageable girls) in Quebec during the 1600s. These imported brides used maple syrup, butter and dried fruit to make what would possibly become the butter tart.

Cute Snowmen


For this craft, you'll need a pair of old socks that are crew length, or longer, 
rice,
rubber bands,
map pins with heads,
buttons,
any left over fabric if you want for a scarf.

First, cut off the top of the sock from the foot. Turn the sock inside out and attach a rubber band tightly to the top of the sock. Then turn the sock right-side out again. Fill the sock with rice. Make sure to pack it down as you go so the sock gets a nice round base. Rubber band the top of the sock closed and put another rubber band 3/4 of the way to the top for the head of your snowman. Now, decorate! Tie a scarf around your snowman's neck and add eyes, nose, and buttons. Use the toe of your cut socks to fashion a stocking cap. Or you could use colored argyle socks to create hats and sweaters for your snowman. You can either sew or glue on your buttons, and add embellishments - twine, bows, ribbons, etc - as needed. This is such a quick and easy craft - 10 minutes tops - that it would be simple to create a whole family of snowmen for your mantle!

Dijon-Parmesan Chicken Breasts Recipe

Try a new twist on baked chicken breasts! Dijon mustard, Parmesan cheese, basil, garlic and high-fibre cereal create the tasty wow.
Ingredients:
3/4 cup (175 mL) Fibre 1* Original Cereal
2 tbsp (25 mL) grated Parmesan cheese
1 tsp (5 mL) dried basil leaves
1/4 tsp (1 mL) garlic salt
1/4 tsp (1 mL) coarse ground black pepper
1 egg white, beaten
2 tbsp (25 mL) Dijon mustard
4 boneless skinless chicken breasts (about 1 1/4 lb/ 625 g)
1 tbsp (15 mL) canola or vegetable oil

Method:
  • Heat oven to 400ºF. Spray 15x10x1-inch pan with nonstick cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • In shallow bowl, mix cereal, cheese, basil, garlic salt and pepper. In another shallow bowl, mix egg white and mustard until blended.
  • Dip chicken into egg white mixture, then coat well with cereal mixture; place in pan. Drizzle oil over chicken.
  • Bake 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (170ºF).

Humber River Clean Up Success

The Third Annual Humber River Clean Up Was  A Huge Success!!
Our third annual Humber River Clean up was a massive success. Thanks to all our 30 volunteers who helped us clear rubbish, chemical containers, dead animals and other strange items (like a message in a bottle!) from the river. All in all, we pulled out two tonnes of solid waste, and the Humber River is one step closer to being back to its natural beauty.
We'd like to send a big thank you to our corporate sponsor The Complete Paddler for helping us out as well. We hope that next year we will have even more corporate sponsors, volunteers, and that the government of Ontario will consider offering support!
