Apple Skillet Cake

A perfect treat for a crisp autumn day.

Ingredients
  • 1 tablespoon butter or margarine
  • 3 apples, peeled and sliced
  • 2 tablespoons packed light brown sugar1/2 teaspoon ground cinnamon
  • 1/2 cup raisins
  • 3/4 cup unbleached or all-purpose flour
  • 1/3 cup sugar
  • 1/8 teaspoon salt
  • 1 1/2 cups 1% milk
  • 2 eggs
  • 1 egg white
  • 2 teaspoons vanilla extract
     
Directions
1. Preheat the oven to 375°F.
2. Melt the butter or margarine in a 10" ovenproof skillet over medium-high heat. Add theapples.Cook for 2 minutes, or until slightly softened.
3. Add the brown sugar, cinnamon, and raisins. Cook for 5 minutes, turning occasionally, or until the apples are tender when pierced with a knife.
4. Meanwhile, in a large bowl, combine the flour, sugar, and salt.
5. In a medium bowl, whisk together the milk, eggs, egg white, and vanilla extract. Add to the flour mixture. Whisk just until smooth. Pour into the skillet with the apple mixture.
6. Bake for 40 to 45 minutes, or until golden brown and puffed. Remove to a rack to cool for 5 minutes.
7. To serve, cut into wedges. With a pancake turner, lift each wedge and turn, apple side up, onto a plate.
